Bacon and Butter Bean Bruschetta

Ingredients

2 tbsp extra virgin olive oil

3 rashers of bacon, chopped

1 onion, finely chopped

1 x 400g can butter beans (or any white bean of your choice)

8 jarred artichoke hearts, cut into halves

1 small handful of freshly grated parmesan

Crusty sourdough, toasted to serve

Salt and pepper

Method

Heat oil in a pan and saute the onions for 2 - 3 minutes. Add the chopped bacon to the pan and cook until slightly caramelised. Add the butter beans to the pan together with the artichoke hearts. Season with pepper.

Drizzle olive oil on the toast, top with the bacon and bean mixture and finish with a sprinkling of parmesan.
