Apricot Fudge Bites

Cook Time 5 minutes + 1 hour chilling

Servings 20-24 bites (depending on how big you slice them!)

Ingredients

250g plain sweet biscuits: digestives, arrowroot or marie

200g dried apricots, presoaked in boiling water for 1 hour, drained and pat dry

125g unsalted butter, cubed

200g condensed milk 

100g brown sugar

½ tsp salt 

1 tsp vanilla extract (or almond extract)

20g toasted shredded coconut, plus extra for sprinkling

Method

Line a 20 x 20 cm baking tin with baking paper and set aside. 

In a high-speed food processor, blitz together all the ingredients until a smooth dough rises 2-3 minutes. 

Remove the dough from the processor and press into the prepared tin. Set in the fridge for 1 hour or until firm.

Place the extra shredded coconut into a large bowl and set aside. Remove the fudge from the fridge to slice into bite-size pieces, toss each piece in the shredded coconut.

Store in an airtight container.
