Air Fryer Granola Clusters

Cook Time 45 minutes

Makes 3 cups

Ingredients

2 peaches, quartered

Muesli

1 cup rolled oats

¼ cup almonds, chopped

¼ cup walnuts or pecans, chopped (or any other nut of your choice)

3 tbsp seed mix

1 tsp cinnamon

Pinch of salt

¼ cup nut butter of your choice 

2 egg whites

2 tbsp maple syrup, plus extra for the peaches

½ tsp vanilla extract 

¼ cup dried fruit (raisins, cranberries, or chopped dates)

To Serve

Plain yoghurt

Method

In a bowl, combine oats, nuts, seed mix, cinnamon, and salt.

Mix together the egg whites, nut butter, maple syrup, and vanilla, then pour the mixture over the oats and stir until fully coated.

Pour the mixture evenly into the air fryer basket and cook for 15-20 minutes at 180°C, checking halfway and tossing gently with a spoon until golden, crunchy clusters form.

In the meantime, coat the peaches in extra maple syrup and roast in the other airfryer basket at 200°C for 10 minutes if using a dual-basket airfryer.

Once granola is cooked, add the dried fruit and let the clusters cool completely—they’ll firm up as they cool. 

Serve with yoghurt and roasted peaches. Store leftover granola in an airtight container.
