Matteo Zamboni

Hailing from a small town in northern Italy, Matteo discovered his love for hospitality at an early age, setting the stage for a lifelong pursuit of culinary excellence.

After honing his skills in some of Italy's most prestigious kitchens, including Michelin-starred establishments like La Pergola in Rome and Ristorante Cracco in Milan, he embarked on an international adventure to expand his culinary repertoire. Along the way, he had the privilege of cooking for esteemed guests, including the Royal Family of Qatar.

During his culinary journey, he had the honour of working for the legendary Seiji Yamamoto in Tokyo, where he further refined his craft and absorbed invaluable insights into Japanese cuisine.

Over a decade ago, he found a new home in Australia, where he quickly established himself as one of the nation's foremost Italian chefs. Matteo's career at the top of the Italian restaurant scene began as sous chef at Ormeggio at the Spit and later as head chef at Pilu at Freshwater, before moving on to his role as executive chef at Jonah's at Whale Beach, where he achieved significant milestones and garnered a series of accolades.

Today, Matteo serves as the founder chef and culinary director of Civico 47 in Paddington, Sydney swiftly establishing it as a point of reference for Italian restaurants in the country. 

From television appearances to partnerships with top-tier companies in the food and design industries, Matteo is dedicated to sharing his love for Italian cuisine with audiences far and wide.

Matteo has also been involved in charities including Bestest Foundation, and he's a proud ambassador for the Miracle Babies Foundation. He is also a father, an amateur cocktail maker, and a part time surfer.
