Andreas Papadakis
Andreas Papadakis is a chef, cookbook author and co-owner of Conferre Group – the hospitality operation behind some of Melbourne’s most beloved and awarded restaurants: Tipo 00, Harriot, Osteria Ilaria, Figlia and Grana.
Athens-born Andreas began his career in Greece, evolving his cooking as he journeyed from Santorini’s casual eateries to Parisian fine diners including Michelin-starred Espadon. After a stint in New Zealand, he settled down with his family in Australia, where he assumed a senior chef role at Melbourne’s Vue de Monde.
In 2014, driven by a desire for a more relaxed, ingredient-focused expression of Italian cuisine, Andreas opened Tipo 00 together with Luke Skidmore and Alberto Fava on Melbourne’s Little Bourke Street. What began as a small pasta bar swiftly became a benchmark for modern Italian dining in Australia, earning critical acclaim and a cult following that endures more than a decade later.
The success of Tipo 00 led to the opening of Osteria Ilaria just a few doors down in 2017, where the team broadened their Italian culinary offering beyond pasta. In 2022, the launch of relaxed neighbourhood pizzeria Figlia and adjoining wine-and-cheese shop Grana extended the restaurant collective’s reach to Brunswick.
The opening of the refined European bistro Harriot in June 2025, marked Conferre Group's first venture beyond Italian cuisine and confirmed Andreas' standing as one of the city's most versatile and ambitious culinary forces.
With more than 25 years’ cooking experience under his belt, Andreas launched his debut cookbook, Tipo 00: The Pasta Book, which received a nomination for a James Beard
Foundation Award the following year.
Grounded in place, produce and enduring technique, Andreas’ food is both humble and profound. Outside the kitchen, he continues to consult, collaborate and teach, and is ever inspired by his lifelong passion for travel, motorbikes, and doing what you love every day.
