Zucchini, Tomato & Chilli Pulse Pasta

Ingredients

250g penne

2 zucchinis, grated

1 bunch broccolini, chopped

1 garlic clove, sliced

1 chilli, sliced finely

4 tbsp olive oil

2 tbsp butter

1 cup vegetable stock

1 punnet cherry tomatoes, cut in halves

½ cup fresh basil

½ cup pecorino, grated

Method

In a pot of boiling salted water, add the pasta and cook as per packet directions.

Heat olive oil, butter, garlic and chilli in a large frying pan on medium heat. Add zucchini, broccolini and cook for 5 minutes, stirring continually.

Next add the tomatoes and stock. Cook for a further 2 minutes and season to taste.

Strain the pasta and add to the pan and mix gently to combine.

To finish, add basil and freshly grated pecorino.

Serve and enjoy with family and friends!
