Wholemeal Pizza Tray Bake

Ingredients

200g bread, pizza & tortilla wholemeal flour

350g bread & pizza plain flour

7g sachet of yeast

1 tsp sugar

500ml lukewarm water

1 tbsp extra virgin olive oil plus extra for pizza topping

Topping

½ cup tomato passata

½ red onion, finely sliced

5 marinated artichokes

10 kalamata olives

8 slices of ham

300g mozzarella, carousel grated

Pinch oregano

Method

Combine 100ml of the lukewarm water, yeast and sugar and set aside in a warm spot to allow the yeast to activate. This should take about 15 - 30 minutes.

In a mixer with a dough hook attached, add both flours and salt and combine. Add the yeast mixture along with the remaining lukewarm water and olive oil and knead until soft. About 5 minutes. Cover and set aside to prove for 1 hour or until it doubles in size.

Grease a 30 cm x 40 cm tray with oil. Remove dough from the bowl and roll out so it can fit into the tray. Place in the tray and let rest for a further hour. Top with passata, half the mozzarella, onion, ham, artichokes, olives, oregano and remaining mozzarella. Preheat the oven to 240°C (or as hot as the oven can go). Bake for 15 - 20 minutes.
