Whipped Brown Butter

Servings make 200g

Ingredients

200g unsalted butter, cubed

Fresh sourdough bread

Method

Melt the butter over medium heat in a saucepan until it becomes foamy. Continue cooking for a further 1 - 3 minutes or until the bubbles subside, the milk solids turn a golden brown being careful that it doesn’t burn. A wonderful nutty aroma should be present. Remove from the heat and cool, swirling regularly.

Now place butter in a bowl that fits easily over another bowl filled with ice. Whisk until the butter becomes chilled and thick and pale. Keep whisking until it is whipped. Serve straight away on fresh bread or store in an airtight container.
