Vegan Sweet Spud Brownies

Ingredients

2 medium-large sweet spuds (peeled and cubed)
2 cups of medjool dates pitted
½ a cup of roughly chopped raw walnuts
1 cup of almond meal (same thing as almond flour)
4 tbsps of raw cocoa powder
½ a cup of goji berries
A tiny sprinkle of chilli flakes
4 tbsps of maple syrup
Pinch of salt

Method

Preheat your oven to 180C. Pop the sweet spud into a pot of boiling water and cook until soft (only takes about 15-20 minutes). Drain the sweet spuds and throw them straight into a blender along with the dates, blend up till everything is super smooth. Scoop the mixture out into a bowl and add the walnuts, almond meal, cocoa powder, gojis, chilli, maple syrup and salt. Give it a really good mix. Then spoon the mixture into a lined baking tray and bake for 20 minutes. Let them rest for about 10 minutes, this is when the mixture will harden up, then slice up and serve. This makes a great pressie too!
