Vanilla and Raspberry Friands with Matcha Sugar

Cook Time 40 minutes

Servings makes 6 large friands or 12 mini friands

Ingredients

10 egg whites, room temp

250g butter, melted + extra for greasing

1½ tsp vanilla bean paste

180g almond meal, lightly toasted

100g plain flour + extra for greasing

300g pure icing sugar, sifted

250g raspberries

For Matcha Sugar

1½ tbsp matcha powder (high quality, bright green in colour)

40g pure icing sugar, sifted

Method

For friands preheat oven to 160°C. Grease friand moulds with melted butter and dust with flour.

In a large measuring jug (or bowl), whisk the egg whites, melted butter, vanilla bean paste, almond meal, flour and icing sugar. Mix until fully combined. Pour into prepared pans, filling them ¾ full. Top each friand with 2 - 3 raspberries and bake for 40 - 45 minutes or until light golden and inserting a skewer comes out clean. Allow to cool slightly before removing from moulds.

For matcha sugar, mix matcha powder and icing sugar until combined (if powders aren’t the same texture, place matcha and icing sugar in a spice grinder or pestle and mortar and grind till fine).

To serve, dust friands lightly with matcha sugar.
