Tuna Rice Paper Sushi Rolls

Ingredients

6 rice paper rolls

1 baby cos lettuce, leaves picked

1 carrot, grated

1 telegraph cucumber, seeds removed and julienned

125g alfalfa sprouts

1 avocado, sliced

50g rice vermicelli noodles, soaked in cold water to soften

Sweet chilli sauce, to serve

Tuna Filling

185g tuna in spring water, drained

2 tbsp mayonnaise

½ tsp wasabi

1 tsp soy sauce

2 spring onions, finely chopped

Method

Combine the tuna mixture ingredients.

Place rice paper into large shallow bowl of water and shake excess off. Lay on a clean surface.

Place a leaf of lettuce in the centre of the softened rice paper roll. Top with a heaped tablespoon of tuna, carrot, cucumber, alfalfa, avocado and noodles. Fold into the side and then roll up tightly. Cut in half and then half again so there are 4 sushi rounds. Repeat with the remaining rice paper rolls.

Place onto a plate and serve with sweet chilli sauce.
