Traditional Italian Chicken Soup

Servings 5

Ingredients

500g small shell pasta

1 medium size fresh chicken

2 carrots, chopped

1 brown onion, chopped

2 stalks of celery, chopped

6 sprigs thyme

1tbs peppercorns

1 cup parmesan

Salt and pepper

Method

In a large cooking pot add chicken, carrot, celery, onion, thyme and peppercorns and add enough cold water to cover the chicken.

Place onto the stove on medium heat and bring to boil. Once boiling, reduce to a simmer and cook for 1.5 hours.

While the chicken is cooking, use a ladle to skim any impurities and discard.

Take chicken out of the pot and remove meat from the chicken.

Strain stock into a bowl removing vegetables.

Place stock back into the large pot and bring to the boil.

Pour pasta into boiling stock and cook for 10 minutes.

Add chicken meat to the pot and add salt and pepper to taste.

Once cooked, finish with freshly grated parmesan.

Serve and enjoy with family and friends!
