Thai Banana Roti

Ingredients

4 roti 

4 bananas, peeled and sliced
2 tbsp condensed milk
Pinch of lemongrass, finely grated 
Pinch of cinnamon 

Method

In a dry non-stick pan over medium heat, heat the roti for 30 seconds on one side, then flip over to heat the other side. Place the banana slices on one side of the roti, then sprinkle over the cinnamon and grated lemongrass.

Fold the other side of the roti over the bananas, press down to seal and then fold in half again and fry for 1 minute on each side until the roti is flaky and crisp and the bananas have melted a little.

Remove from the pan and repeat with the remaining roti and bananas. 

Garnish with a drizzle of the condensed milk.
