Stuffed Nashi Pears

Ingredients

4 Nashi pears
200ml pomegranate juice
250g mixed fruit
1 tsp. brown sugar
Pinch ground ginger
70g butter
70g slivered almonds

Method

Preheat the oven to 180°C.

Carefully remove the core from the pears with a Parisian scoop and ensure they don’t split. Reserve half of the nashi pear insides and finely chop it.

In a small saucepan add you pomegranate juice and bring to a boil, then add the mixed fruit, brown sugar and a pinch of of ground ginger and keep boiling until it becomes thick and the fruit have rehydrated

Take off the heat and add the butter, almonds and finely chopped nashi pear and mix evenly. Drain any excess liquid and reserve it.

Fill you Nashi pears with the mix and bake for 10-15 minute until the pears are soft. Serve with a double cream and finish with the extra syrup.
