Sticky Beer and Bacon Chicken Wings

Ingredients

2 tbsp chopped chipotle in adobo sauce

½ cup maple syrup

3 garlic cloves, grated

330ml beer (lager)

2 rashers streaky smoked bacon, finely chopped

1.2kg chicken wings, wingtips removed

2 spring onions

1 Lebanese cucumber, deseeded

¼ cup salted peanuts

1 lime, juiced

Method

Preheat oven to 180°C.

Combine the chilli, adobo sauce, maple, garlic, bacon and beer in a roasting dish and season with salt. Add the chicken wings and toss to coat. Add to the oven and roast for 1 hour and 15 minutes, turning every 15 minutes.

Finely chop the spring onion, cucumber and peanuts and combine then drizzle over lime juice.

Remove sticky wings from the roasting pan and place on a platter. Drain any sauce from the pan and skim off the fat.

Pile chicken wings on a patter and scatter over the spring onion and cucumber mixture to serve.
