Steak with Chargrilled Spring Onions and Sour Cream Dressing

Ingredients

1 tbs. olive oil
2 x 150g pieces of sirloin steak
½ bunch of spring onions, green tops removed
Pinch cayenne pepper
Salt and pepper

Dressing
½ cup sour cream
1 tsp. seeded mustard
1 tsp. horseradish
1 bunch chives, finely chopped
Juice and zest of ½ lemon
1 tbs. warm water

Method

Bring the steaks out of the fridge 30 minutes before cooking.

Heat a griddle pan on high heat. Drizzle ½ the oil over the steaks and season with salt and pepper.

In a bowl toss the spring onions with the remaining oil, salt and pepper and cayenne.

Place the steaks on the grill and cook for 2-3 minutes before turning over and cooking for another 3 minutes. At the same time, arrange the spring onions around the steak and brown all over for 6 minutes.

Remove the steaks and spring onions from the pan and allow the steak to rest for a few minutes.

For the dressing, combine all the ingredients together.

To serve, slice the steak and place on a platter with the spring onions. Drizzle the dressing over.
