Spicy Prawn Soup

Ingredients

250g angle hair pasta, broken up 

1.5L fish stock

2 star anise

1 piece of ginger, sliced thinly

1 bunch of coriander, separate leaves from the stalk

2 red chillies, sliced in halves

3 tbsp sriracha sauce

2 tbsp dark soy

8 green prawns, head & shell off, tail on

1 lime, juiced

1 bunch of choy sum, cut into 2 cm pieces 

½ cup Thai basil

½ cup bean sprouts

2 tbsp crispy shallot 

Method

Heat stock, star anise, ginger, coriander stalks, chilli, sriracha and soy sauce in a pot. 

Bring the stock to the boil and add the pasta and prawns. Cook pasta as per the packet directions for cooking time.

Once pasta is cooked, turn the heat off and add lime juice, choy sum and basil.

Divide into two bowls and finish with coriander, bean sprouts and crispy shallots on top. 

Serve and enjoy with family and friends!
