Spiced Lamb Wrap

Ingredients

Spiced Lamb

200g lamb loin

1 tsp chilli powder

1 tbsp coriander powder

1 tsp cumin powder

1 tsp garam masala

1 tsp dried mint

1 tbsp ginger garlic paste

1 tsp salt

2 tbsp Extra Virgin Olive Oil

60g lettuce, chopped

1 tomato, sliced

1 onion, finely sliced

4 wraps

Yogurt and mint sauce

100g natural Greek yogurt

½ bunch mint

½ tsp salt

Method

Mix together all of the spices with 1 tbsp of extra virgin olive oil and rub over the lamb. For best results leave to marinate in the fridge for 2-3 hours.

In a hot pan, add the remaining extra virgin olive oil and sear the lamb on both sides for a minute. Place in the oven at 180°C for 4-6 minutes depending on the thickness of the lamb cut.

For the sauce, finely chop the mint and mix with yoghurt and salt.

Remove the lamb from the oven and allow it to rest for 10 minutes or half the cooking time. Slice to desired thickness.

To assemble, place the wrap on a plate, add lettuce, tomato and onion, lamb slices and drizzle with yoghurt and mint sauce, and roll.
