Soy Chai

Ingredients

2 cups water
1 vanilla pod
2 whole black peppercorns
3 cardamom pods, bruised
3 cloves
1 cinnamon stick
2 slices of ginger
2 tsp. black tea
1 cup of soy milk (or any milk of your choice)
Nutmeg, freshly grated
Honey, to taste

Method

Place water and all spices (except the nutmeg) and ginger into a small saucepan and bring to the boil. Turn the heat down and simmer for 8 minutes before adding the tea. Turn the heat off and infuse for another 8 minutes.

Now add the milk and gently heat, ensuring not to boil. Strain the tea.

Place honey in the bottom of late glasses and pour chai late into the glasses and sprinkle with nutmeg.
