Snapper Baked with White Wine and Bay Leaves

Ingredients

2 x 650g whole snapper, tail removed

100g butter

1 cup white wine

2 ripe tomatoes, diced

2 French shallots, diced

6 fresh bay leaves

Olive oil

Salt

Method

Preheat the oven to 190°C.

Place the fish into a large baking dish, head to tail. Season with salt, olive oil and bay leaves, including inside the gills.

Scatter the butter, shallots and tomatoes to the dish together with the white wine.

Cook in the oven for 15 - 20 minutes or until the fish is cooked through to the bone.
