Silken Tofu with Caramelised Shallots

Cook Time 20 minutes

Servings 2-4 as a side

Ingredients

200g block silken tofu

2 tbsp vegetable oil
2 shallots, thinly sliced
2 tbsp caster sugar
1 tbsp dark soy sauce (gluten free option)
1 tbsp light soy sauce (gluten free option)
2 spring onions, thinly sliced
1 bunch of coriander, leaves picked

Method

Place a steamer basket over a large wok filled with 2 cups of water and place over high heat. Place the tofu on a plate and place into the steamer basket and steam the tofu for 10-12 minutes.

Meanwhile, make the caramelised shallots. Place the oil into a small pan and saute the shallots for a few minutes until softened. Sprinkle over the sugar and add in the dark and light soy sauce and cook for a further 5-10 minutes until caramelised.

Once the tofu is ready, remove from heat and ladle over the caramelised shallots. Garnish with sliced spring onions and coriander leaves.
