Salmon and Soba Noodle Salad

Ingredients

270g soba noodles

2 x (95g) cans salmon, drained well

4 spring onions, finely sliced

1 large handful of snow peas (about 150g), topped and tailed, sliced lengthways

150g edamame beans, blanched and podded

1 tsp of toasted sesame seeds, to garnish

For the dressing

1 tbsp white miso paste

2 tbsp light soy sauce

2 tbsp mirin

1 tbsp caster sugar

1 tbsp sesame oil

1 tbsp extra virgin olive oil

Method

For the dressing place all of the ingredients into a jar and give it a good shake. If too thick add a splash of water.

Bring a large saucepan of water to the boil and cook the soba noodles as per the packet instructions. Drain and refresh under cold water.

In a large bowl, combine the salmon, noodles, spring onion, snow peas and edamame. Pour three-quarters of the dressing over the salad and toss. Add the remaining dressing and toss again. Scatter over the sesame seeds and serve.
