Rojak Fruit Salad

Ingredients

1 small sweet potato, steamed until tender and cut into rounds

½ fresh pineapple, cubed in 3 cm pieces

1 green mango, cut into 3 cm pieces

1 Lebanese cucumber, cut into 3 cm pieces

3 fried tofu puffs, halved

1 large handful of bean sprouts

¼ cup toasted peanuts, chopped

A sprinkle sesame seeds, toasted

Sauce

1 tbsp sambal belacan (or sambal oelek with a tiny splash of fish sauce as an alternative)

1 tbsp grated palm sugar

1 tbsp dark soy sauce

Method

Combine the sauce ingredients together.

Place all of the fruit and vegetables in a large bowl and pour over the sauce. Gently coat all the fruit and vegetables in the sauce.

Arrange in a bowl and top with bean sprouts, peanuts and sesame seeds.
