Radicchio, Celeriac and Blue Cheese Salad

Ingredients

150g celeriac, finely chopped 

½ radicchio, roughly chopped

2 figs, cut into quarters

20g walnuts, toasted

Dressing

80g blue cheese 

A splash of white wine vinegar

2-3 tbsp extra virgin olive oil

Salt and pepper

Method

In a blender, blitz the dressing ingredients.

Combine the celeriac, radicchio, and figs in a large bowl. Toss the dressing through until everything is coated.

Plate up the salad onto a serving dish and top with walnuts.
