Potato Ragout

Ingredients

2 tbsp extra virgin olive oil
1kg Desiree potatoes, peeled and quartered
2 onions, diced
150g of smoked speck cut into lardons
1 tbsp plain flour
500ml chicken stock or water
2 sprigs thyme
Salt pepper

A delicious French classic, Potato Ragout!

Method

Heat the oil in a heavy base casserole and add the onions and speck and sauté until golden brown.

Add flour to the pan and cook off for 30 seconds. Add the stock, salt and pepper, stir and bring to the boil, then simmer for 10 minutes then add the potatoes. Cover and simmer for 50 – 60 minutes or until the potatoes cooked.
