Portuguese Rice Pudding

Ingredients

1 cup of cooked rice

1 ½ cups of milk

¼ cup of sultanas

zest of 1/2 a lemon

2 egg yolks

¼ cup (60g) caster sugar

1 tsp cinnamon, plus extra to garnish

Any fruit of your choice (I like mango, nashi pear and strawberries)

Pinch of salt

Method

In a medium pot bring the milk to boil and add the rice. Stir regularly so the rice does not catch, then add the zests and sultanas. Cook for 3-4 minutes.

Whisk together eggs, sugar and cinnamon until pale and thick. Remove the rice pudding from the heat and using a wooden spoon mix in the egg and sugar mixture. Mix vigorously until thick and silky. Pour into bowls and top with fruit, extra cinnamon and a pinch of salt.
