Pork scotch fillet steaks with peppercorn sauce

Ingredients

1 tbs. olive oil
4 pork scotch fillet steaks
Salt and pepper
2 tbs. green peppercorns
80ml Madeira
200ml veal stock
2 tbs. cream

Method

Season the steak with salt and a generous amount of pepper. Heat oil in a large non-stick pan.  Sear steaks for 3 minutes on each side. Remove from the pan. Deglaze with Madeira. Whisk and add the stock and peppercorns and reduce until it starts to thicken slightly. Add the cream and return the meat along with the juices. Bring to the boil and reduce again until a sauce consistency develops.
