Pork chops with sweet fennel relish

Ingredients

4 pork chops

2 sprigs of thyme

2 tbs. olive oil

Salt and pepper

Relish

2 tbs. olive oil

1 onion, finely diced

1 tsp. cumin seeds

2 medium fennel bulbs, stalks removed and finely diced

1 apple, peeled, cored and finely diced

1 tomato, roughly chopped

2 tbs. brown sugar

4 tbs. apple cider vinegar

Method

For the relish, heat the oil in a pot and sauté the onions with the cumin seeds and a pinch of salt. Once they have softened add the fennel and cook for a further 5 minutes. Now add the apple, tomato, brown sugar, vinegar and a splash of water cook with the lid on of 15-20 or until the vegetables have cooked down and are very soft.

Heat a large pan or BBQ over medium heat. Drizzle oil over the chops and season with salt and pepper. Cook for 4-6 minutes on each side, adding the sprigs of thyme half way. Remove from the pan and rest for 4 minutes. Serve with the fennel relish.
