270ml coconut milk

3 tbsp white rum

12 x mini store-bought meringues

Fresh mint

Pineapple and Coconut Dessert

Method

Blend defrosted pineapple with coconut milk and rum, serve in chilled glasses with crumbled meringue.

Garnish with freshly chopped mint.
