Pickled Cucumber in Fried Cheese

Ingredients

4 tbsp parmesan cheese, grated

½ cup shredded mozzarella cheese

4 pickled cucumbers, cut in halves lengthways

Method

In a crepe pan heated over a medium to high heat, sprinkle a mix of parmesan and mozzarella cheese into 4 round flat shapes and cook until the edges brown.

Place a slice of pickle on each round of melted cheese and using a pallet knife carefully wrap and encase the pickle. Flip to seal on the seam side before removing it from the pan.

Repeat with the remaining pickle halves and enjoy!
