Papaya and Lentil Curry

Ingredients

1 tbsp vegetable oil
1 small brown onion, peeled and sliced
3 cm young ginger, finely chopped
2 cloves garlic, finely chopped
1 ½ tbsp Malaysian curry powder
? cup cooked Du Puy lentils*
1 tbsp tamarind puree
3 ripe tomatoes, roughly chopped
½ cup good quality chicken stock
½ cup coconut milk
1 tsp sea salt
1 tsp raw sugar
250g papaya, roughly chopped

Method

Fry onions, ginger and garlic in the vegetable oil for 2-3 minutes or until fragrant. Add the curry powder and cook for two minutes. Add the lentils, tamarind puree, tomatoes and stock then bring to boil.  Simmer for 5 minutes. Add coconut milk and bring to boil. Add salt and pepper then turn the heat off. Add papaya and allow stir through gently until the papaya is heated. Serve hot with a bowl of steamed basmati rice.

 Note: to cook Du Puy lentils, first rinse  them well. Then put them in a saucepan and add 6 times as much water or stock. Bring to boil then simmer for 20-25 minutes or until lentils are tender.
