Oysters with Green Peanut Nahm Jim

6 oysters

2 long green chilli

1 Thai green chilli

1 clove garlic

1 coriander root

1 small knob of ginger

1 small knob galangal

100 ml lime juice

25 ml fish sauce

50gm palm sugar
1 tbsp roasted peanut, crushed to serve

Oysters with Green Peanut Nahm Jim


Place all ingredients into a large mortar and pestle (except liquids and palm sugar ) and smash all of them together until a fine paste forms.

Season with the lime juice, palm sugar and fish sauce, to ensure it is hot and sour.

Sprinkle crushed roasted peanuts on top to serve.
