Orange Vegan Cake

Ingredients

1 whole orange

80ml extra virgin olive oil

200g almond meal

½ cup plain flour

150g caster sugar

1 heaped tsp baking powder

Raspberries, to serve

Coconut yoghurt, to serve

Method

Preheat the oven to 170°C. Grease and line a 20 cm spring form tin with baking paper.

Submerge the orange in a medium pot of water and simmer the orange for 30 minutes over a medium heat until you can pierce through with a knife with no resistance. Drain the water and allow the orange to cool. Roughly chop the orange (skin and all) and remove any seeds. Place it in a food processor with the olive oil and blitz until it's roughly pureed.

In a mixing bowl combine the almond meal, flour, sugar and baking powder. Add the orange and oil mixture and fold together. The mixture should be thicker than a usual cake batter. Spoon into tin.

Bake the cake for 35 - 40 minutes. The cake is ready when a skewer inserted into the middle comes out clean. Allow the cake to cool completely in the cake tin. To serve, top with berry & coconut yoghurt.
