One Pot Meatballs and Risoni

Ingredients

500g risoni

1 jar tomato passata

1 garlic clove, sliced

1 small onion, sliced

400g thick beef sausages, case removed

½ bunch flat leaf parsley, chopped

¼ cup olive oil

500ml chicken stock

½ cup pecorino, grated

Salt and pepper

Method

In a large pan on medium heat, add olive oil, garlic and onion. Cook for 3 to 5 minutes or until onion is soft.

Roll sausage meat into 10 cm size meatballs. Add into the pan and cook for 2 to 3 minutes until sealed and brown.

Pour tomato and stock into pan and bring to the boil. Add pasta into pan with a drizzle of olive oil and mix. Cover with a lid and reduce heat to a simmer and cook for 10 minutes or until pasta is cooked. Stir occasionally to pasta doesn’t stick.

Once pasta is cooked, turn off heat and add parsley and pecorino.
