My Easy Fried Rice

Ingredients

3 tbsp Alfa One rice bran oil
500g cooked rice (leftovers work well)
4 spring onions, finely sliced, plus extra for garnish
2 eggs, beaten with 1 tsp. soy
3 lap cheong sausages*
5 prawns, uncooked, peeled, deveined & roughly chopped
1 knob of ginger, grated
2 cloves garlic, finely chopped
coriander to garnish

Sauce
1 tbs. light soy sauce
1 tbs. oyster sauce
1 tbs. chilli sauce (optional)
1 tsp. fish sauce
1 tsp. sugar
3 drops of sesame oil

Method

Heat a wok or frying pan on medium heat with 1 tbs. of the oil. Add the egg mixture and move around the pan to make it as thin as possible. Once cooked remove and roll into a cigar before roughly chopping.

Add the remaining oil to the pan and turn the heat up to high. In a fast motion, add the spring onions and sausage and cook for a minute. Now add the garlic and ginger and toss before putting in the prawns. Cook for 30 seconds, add the rice and stir. Finally add the sauce and the egg and toss well to ensure the rice and all the ingredients are coated well.

Garnish with a little more fresh spring onion.
