Miso Taramasalata

Ingredients

Tarama 

120g old bread or breadcrumbs

160g Cod Roe - You can always substitute with a really good pack of Anchovies, the expensive ones!

2 tbsp red miso 

2 lemons juiced

200ml light extra virgin olive oil

100ml garlic & onion oil  

100ml soda water 

Soy and rice vinegar for seasoning

Sides

2 Lebanese cucumbers 

Salt

3 tbsp Chardonnay vinegar 

3 tbsp sugar 

4 warmed pita

1 cos, washed and left whole

Method

Soak bread/breadcrumbs in water for a few minutes then squeeze out. 

Add bread, cod roe, miso and lemon juice and process till smooth.

Slowly add the oils then add soda water until light and fluffy.

Season with soy and rice vinegar.

Cut cucumbers into wedges, and salt and let sit for 10 minutes. Wash under cold water and pat dry. Just before serving mix with the vinegar and sugar.
