Mexican Rice

Ingredients

500g brown rice, cooked the day before

1 onion, diced

80ml vegetable oil

500g beef mince

3/4 cup frozen corn kernels

1 tsp each of cumin, smoked paprika, ground coriander, dried oregano

1 x 400g can kidney beans

1 ripe avocado

Light sour cream

1 tomato, diced

Coriander, to garnish

Method

Cook the brown rice as per package instructions.

In a work over a high heat, add the oil and saute the onion with a pinch of salt until translucent. Then add mince and fry until caramelized. Add the spices to the pan, then add the corn, beans and brown rice. Fry for a further minute until rice has warmed through, tossing occasionally.

Serve rice with avocado, diced tomatoes and a dollop of sour cream. Garnish with coriander.
