Ingredients

1 cup vegetable oil

125g unsalted butter, room temperature

½ cup castor sugar

190ml beer

½ tsp bicarb soda

½ tsp ground cinnamon

½ tsp ground clove

¼ tsp nutmeg

1 orange (zest only)

4¾ cups self raising flour

1 cup crushed walnuts

Syrup

½ cup water

½ cup honey

½ cup castor sugar

¼ cup orange juice

Strip of orange rind

You will also need

Additional ½ cup crushed walnuts

1 tsp cinnamon, for the top

Method

Preheat oven to 180°C fan forced.

In a mixing bowl add vegetable oil, butter and castor sugar and whisk well to combine. Add beer and spices and mix well.

In a separate bowl add the flour and bicarb soda and mix well to combine. Add flour to the wet mixture including the crushed walnuts. Mix well to combine.

Line baking trays with baking paper.

Start rolling mixture into walnut size balls, Roll into a log shape Place onto baking paper and score with a fork.

Bake for 25 to 30 minutes until golden brown.

Make the syrup while biscuits are baking. Add all syrup ingredients into a saucepan and simmer till sugar has dissolved and thickened approximately five minutes.

In a small bowl add crushed walnut to an almost sand consistency and mix with cinnamon to top the biscuits with and set aside.

Once the biscuits are cooked and still warm, dip them quickly into the syrup and put on to a plate. Top with walnut crumble mixture.
