Make Ahead Porridge

Cook Time 30 minutes plus freezing

Servings 24 portions

Ingredients

1 cup of steel-cut oats 
1 cup rolled oats 
2 cups of milk 
Pinch salt
3 tbsp brown sugar (or to your taste)
3 punnets of mixed berries of your choice 
Nut butter of your choice
1 banana

Method

Combine 2 cups of water with the milk and a pinch of salt and bring to a gentle boil. Rain in the oats and stir to combine. 

Stirring occasionally, cook for 15-20 minutes on a medium to low heat until the steel cut oats are just tender but slightly chewy and the rolled oats are creamy. Now add the sugar and stir through to dissolve.

Portion porridge in a 2 x 12-hole muffin tin. And top with a variety of berries, banana, nut butters. Freeze. 

Remove tins from the freezer and place the porridge portions into zip lock bags. They’re now ready for a very speedy but delicious breakfast.
