Low Carb Wrap with Super Greens and Egg

Ingredients

3 tbsp cottage cheese or ricotta 
2 bunches of English spinach, blanched, liquid squeezed out 
1 small handful of basil leaves 
1 small handful of parsley leaves 
½ bunch chives 
4 eggs
Salt and pepper
1 tbsp extra virgin olive oil
2 Mission Low Carb Wraps
4 slices of smoked salmon 

Low Carb Wrap with Super Greens and Egg

Method

In a food processor add the cottage cheese, spinach and herbs and blitz until a rough paste forms. Now add the eggs and a pinch of salt and pepper and pulse 3-4 times to combine.

Heat half the oil in a large non-stick pan over a medium heat, add half of the green egg mixture and spread around the pan so it’s thin like a crepe. Once it has almost set press a Mission Low Carb Wrap gently on top so it sticks, and then turn it out onto a large plate. Place some salmon and herbs on one side and fold the wrap over in half. Return to the pan to brown the folded wrap on each side.

Repeat the process with the remaining egg mixture, salmon, herbs and wrap.
