Leftover Rice Fried Patties

Ingredients

1 cup cooked leftover medium grain rice (or any rice)

½ cup baby peas 

1 carrot, grated

2 slices smoked ham, chopped

¾ cup cheddar 

1 egg

1 tbsp flour 

3 tbsp classic extra virgin olive oil, for frying

Method

Add all of the ingredients, except for the oil into a large bowl. Mix to combine all of the ingredients, using the back of the spoon to break up the ingredients. 

Add a few tablespoons of extra virgin olive oil to a hot pan over a medium-high heat. Portion the patties, a heaped tablespoon for each and fry for 1 minute on each side or until golden brown.
