Individual Apple Crumbles and Spiced Cream

Ingredients

8 Fuji apples

½ cup brown sugar 
100g butter 
180ml whipping cream
1 vanilla pod, seeds scraped
½ tsp ground cardamom
2 tbsp icing sugar   


Crumble
½ cup plain flour 
½ cup almond meal
½ cup brown sugar
¼ cup oats
1 tsp cinnamon
Pinch of salt
120g butter, cold 

Method

Preheat the oven to 190°C.

Peel, core and chop 4 apples into 3cm cubes. Cut the tops off the remaining 4 apples and reserve. With a melon baller scoop out the inside of the apples, leaving a 1cm border. Be careful not to pierce the skins.

Discard the cores and place the scooped out flesh and chopped apples into a saucepan with ½ cup of brown sugar, 100g butter and 2-3 tablespoons of water. Cook over a medium heat for 10-15 minutes  or until the apple just start to collapse.

For the crumble, place all the dry ingredients into a bowl and combine. Rub the cold butter into the dry ingredients with the tips of your fingers and form rough little clumps.

Place the four hollowed out apples and their tops onto a lightly oiled baking tray and fill them with the cooked apple. Top with the crumble and bake in the oven for 15 minutes or until the top is crunchy.

Whisk the cream with the vanilla, cardamom and icing sugar. Serve apple with a generous dollop of cream.
