'I Can't Believe These are Healthy' Breakfast Bars

Ingredients

1 cup rolled oats

⅓ cup pecans, chopped

¼ cup chia, blitzed

⅔ cup desiccated coconut

⅓ cup medjool dates, finely chopped

Pinch sea salt

1 tsp ground cinnamon

2 tbsp peanut butter (made with just peanut butter and salt- no other additives)

¼ cup maple syrup

2 tbsp melted coconut oil

Method

Preheat an oven at 160°C. On a baking tray lined with baking paper, evenly spread the rolled oats and pecans and toast in the oven for 10-15 minutes, until lightly golden. Remove and cool slightly. Transfer to a mixing bowl and add the chia, coconut, dates, salt and cinnamon. In a separate bowl, combine the peanut butter, maple and coconut oil. Stir the wet ingredients to the dry ingredients and mix everything well.

Press the mixture into a rectangle, making sure everything is evenly compacted so that it doesn’t crumble when you cut it. Bake for 20-25 minutes, then remove from oven. When cool enough to handle, cut into 10 bars, then fully cool and store in an airtight container.
