Honey, Soy and Pineapple Turkey Legs

Ingredients

2 large turkey legs
¼ cup olive oil
Salt and pepper
1 cup chicken stock
⅓ cup soy sauce
1 tbsp honey
3 cloves garlic, roughly chopped
1 stick cinnamon
2 cloves
1 star anise
1 cup diced pineapple
1 piece of orange peel

Method

Heat half the olive oil in the pressure cooker then add the turkey legs and sear on all sides. Season well and salt and pepper.

Deglaze the pot with the chicken stock and soy sauce, then add in all of the remaining ingredients. Place the lid on and bring to pressure, then reduce heat on the stove and cook for 45 minutes or until turkey legs are tender.

Can be served with quinoa or rice.
