Honey Baked Pears with White Chocolate Saffron Sauce

Ingredients

20g butter
¼ cup caster sugar
¼ cup honey
2 tbsp water
6 corella pears, peeled, halved and cored

½ cup water, extra
1 tbsp honey, extra
½ tsp saffron threads
150g white chocolate, extra

Coarsely chopped biscotti, for serving (optional)

Method

Place the butter, caster sugar, honey and water in a baking dish and warm in a very hot oven (220°C) for five minutes. Add the pears, turn to coat and bake, cut-side down for 25-35 minutes, turning once or twice during cooking time.

*Tip: if peeling and halving your pears ahead of time, keep them in a bowl of cold water with a dash of lemon juice to stop them from going brown until you need them.

Meanwhile, combine the extra water, extra honey and saffron threads in a small saucepan and bring to a simmer. Remove and stand for 15 minutes. Bring back to a simmer then pour in white chocolate and whisk to combine. Serve warm with pears and a smattering of biscotti crumbs, if desired.
