Grilled Lamb with Smashed Cucumber Salad

Ingredients

1 tsp olive oil

2 lamb backstraps

1 large telegraph cucumber

1 tbsp caster sugar

2 tbsp Chinese black vinegar

3 tbsp light soy sauce

1 tsp crispy chilli condiment

2 tbsp fried shallots

1 small handful of coriander leaves

Salt and pepper

Method

Using a rolling pin, smack the cucumber to bruise. Cut in half lengthways and then cut into 1 cm chunks. Season with a pinch of salt and let stand for 15 minutes.

Whisk together the sugar, vinegar, soy and chilli condiment.

Preheat the BBQ or grill. Spread oil over lamb and season with salt and pepper. Grill lamb for 3 - 4 minutes on each side for medium. Rest for 4 - 5 minutes before slicing.

Wash cucumber and pat dry. Toss in a bowl with the dressing.

Arrange meat on a plate and top with the cucumber, coriander and fried shallots.
