Grilled Fish with a Herby Chilli Sauce

Servings 4

Ingredients

4 x 180g fish fillets of your choice (blue eye cod, trevalla, red emperor or mahi mahi)

Sauce

1 clove garlic, minced 

3 spring onions, finely chopped

1 small red chilli, finely chopped

Zest and juice 1 lime

2 tbsp extra virgin olive oil

½ bunch chives, finely chopped

2 sprigs parsley, chopped 

Salt and pepper

Jasmine rice, cooked, to serve

Method

In a bowl, combine all the sauce ingredients with 2 tablespoons of boiling water. Set aside.

Oil and season the fish with salt and pepper. Heat a large pan over a high heat. Fry the fish skin side down for 3 minutes, flip and then cook for another minute. 

Serve on a bed of rice, with the herby chilli sauce.
