Grilled Chicken with Marouli Salad

Ingredients

3 tbsp extra virgin olive oil

4 chicken thighs, skin on preferably

½ iceberg lettuce, shredded

4 spring onions, finely chopped

3 sprigs of dill, finely chopped

80g fetta, crumbled

Juice of half a lemon

Salt and pepper

Method

Preheat the grill plate in the air fryer until hot (or heat a griddle pan to a high heat). Drizzle oil all over chicken thighs then season with salt and pepper. Cook chicken skin-side down for 4 - 5 minutes or until lightly charred and crispy. Turn the chicken and cook for a further 3 - 4 minutes. Remove the chicken and rest for 1 - 2 minutes.

To make the Marouli salad, toss together the lettuce, spring onions, dill and fetta. Whisk together the lemon, salt and pepper and remaining oil. Toss dressing through salad just before serving.

Slice chicken and serve with salad.
