Green Olive Dip, Cauliflower and Salad Sandwich

Cook Time 10 minutes

Servings make 4 sandwiches

Ingredients

1 packet 200g green olive dip

2 large florets of cauliflower, steamed, chopped and blanched

2 tbsp walnuts, chopped

A few leaves of iceberg lettuce

Canned beetroot, sliced

1 tomato, sliced

1 carrot, grated

Super fresh seeded loaf bread

Method

Mix the olive dip with the cauliflower and chopped walnuts.

Spread on one slice of bread.

Top with tomato, salt and pepper, beetroot, carrot, lettuce and finish with the other slice of bread. Gently press on the sandwich and serve.
