Greek Biscuits

Cook Time 40 minutes plus resting

Servings makes 12 biscuits

Ingredients

3 cups of self raising flour, plus extra for dusting

½ cup caster sugar

2 eggs, plus 1 extra yolk for glazing

¼ cup extra virgin olive oil 

½ cup milk, warmed

Zest of 1 orange 

Juice of ½ orange

1 tsp vanilla bean paste 

Method

Whisk together the eggs, sugar, oil, milk, orange and vanilla. Rain in the flour, 1 cup at a time. Once all incorporated, knead on a floured bench until a smooth dough forms. Cover and rest for 30 minutes. 

Preheat the oven to 180°C.

Cut 2 pieces of dough and roll into two thin sausages. Plait then cut into biscuits. Place on a tray lined with baking paper and brush with the egg yolk wash.  

Bake for 10 - 15 minutes or until golden.
